Sometimes the best gifts are homemade... And what better way to show your gratitude than by baking someone some delicious cookies? These sugarfree cookies were a small gift for a very special person.
Sugarfree Spelt and Oat Cookies

125 g wholewheat spelt four
100 g desiccated coconut
50 g raisins
100 g rolled oats
Pinch of salt
125 g butter
85 g honey
1/2 teaspoon baking soda
Preheat the oven to 180 degrees Celsius and line a baking tray with non-stick parchment paper.
In a large bowl, mix the flour, desiccated coconut, raisins, rolled oats and salt. In a small saucepan over low heat, melt the butter and honey. Mix the baking soda with two tablespoons of boiling water and add to the flour mixture. Then add the melted butter and honey as well, and stir thoroughly using a wooden spoon.
Roll heaped tablespoons of the cookie dough with your hands and place on the baking tray. Slightly flatten each cookie using a fork or your thumb. Bake the cookies in the preheated oven for about 15 minutes or until golden brown. Remove the cookies from the oven and let them cool on a wire rack. Store the cookies in a glass jar and serve with a cup of tea.
