Believe it or not, but today is Pancake Day!! What a happy celebration indeed. I am so very fond of pancakes! I dare say that in my home, it's pancake day almost every weekend... As a young child, I grew up in Pasadena in an American bungalow just around the corner from IHOP. Every now and then, my parents took me there for a pancake breakfast. Happy memories. Before our pancakes were served, I was allowed to color in the paper placemats with my crayons. I think my dad may still even have some of these colorful artsy placemats of mine on file!
I now have a favorite new fluffy pancake recipe that I would like to share with you on this day of celebration. These Greek yogurt pancakes are really good with whole wheat flour, but you could also use spelt or all purpose flour instead.
Greek Yogurt and Lemon Pancakes
250 g Greek yogurt
juice and zest of a lemon
1 teaspoon vanilla
3 eggs, separated
1 tablespoon butter, melted and some extra butter for baking
100 g whole wheat flour
1 teaspoon baking soda
1 tablespoon raw cane sugar
Fresh fruit and runny honey or maple syrup to serve
In a large mixing bowl, beat together the Greek yogurt, lemon juice and zest, egg yolks, vanilla, and the melted butter. Sift in the whole wheat flour and the baking soda and fold in.
In another bowl, whisk the egg whites until soft peaks form, then add the raw cane sugar and mix until firm. Fold the egg whites into the batter.
On medium heat, melt some butter in a heavy skillet frying pan, and drop big tablespoons of the batter into the hot pan. Cook the pancakes for about three minutes on each side, making batches of two or three at a time.
Serve right away with some fresh fruit such as strawberries* and some runny honey or maple syrup. You could also sprinkle over a little bit of lemon juice and a dollop of Greek yogurt if you like.
* There is no excuse, it really isn't time for strawberries yet, but I saw them in the shop and only that hint of strawberry flavor eased my craving for the real deal!!! For now... Can't wait for Spring to come!
